The Meal that Never Fails - Chicken and Hollandaise Sauce

If you eat with your kids half as much as we do you know those favorite meals that no matter how many times you serve it up, they will cheer for joy! This is that meal for the Hedges family! 

Chicken with Hollandaise sauce is one of those dishes that lends itself to a few variations too. We have tried it with noodles vs. rice. You can even try different rices, but I will tell you what works best for us; simple white rice. Try it! You'll thank us!

 

Another variation is the bell peppers. Green bell peppers have a distinct earthy flavor to them while their red, yellow and orange counterparts will had some sweetness to your dish. They also add amazing color on the plate!

 

This recipe feeds our family of six with NO leftovers, so if you need to double it or even just take some to work tomorrow and be the envy of your coworkers you'd better plan according!

 

Chicken and Hollandaise Sauce

 

Crockpot Ingredients:

------------------------------------------------------------------------

3 bell peppers

------------------------------------------------------------------------

1 packet mushroom gravy

------------------------------------------------------------------------

8 tablespoons butter (1 stick)

------------------------------------------------------------------------

2 tablespoon minced onion 

------------------------------------------------------------------------

Salt and pepper

------------------------------------------------------------------------

3 pounds boneless chicken breast

------------------------------------------------------------------------

4 cups water

 

Other Ingredients

------------------------------------------------------------------------

Box of Rice

------------------------------------------------------------------------

2 Hollandaise Sauce packets (check instructions for either milk or water)

 

Directions

 

Crock Pot

 

Julienne  the bell peppers

 

Combine crockpot ingredients into a crockpot

 

Cook on low for 6 hours

 

Follow instructions on boil rice in by the box requirements

 

Follow instructions on hollandaise sauce packet

 

Serve with your favorite veggie

 

 

Note: If you aren't a fan of crock pots you can grill the chicken, then blend the "crockpot" ingredients in a saucepan to add more flavor to the chicken.
